Tucupi Broth Recipe

Tucupi is a typical broth of Amazonian cuisine, prepared with wild manioc root. It is simple to prepare Tucupi broth, but you will have to comply with several steps and wait at least a day to obtain the final result. Ingredients for making Tucupi Broth:

 3 kilograms of wild cassava (maniva)

 1 liter of water

 3 cloves of garlic

 2 bunches of chicory

 Black pepper

 salt

How to make Caldo de Tucupi:

To make Tucupi broth, the first step is to peel the manioc, chop and blend some of the manioc with a little water in a powerful blender.

Tip: As an alternative you can peel and grate the cassava, but this method takes longer.

Strain, squeeze in a cloth and take the liquid back to the blender with more chopped cassava. The ideal is not to use too much water, so you will get a more concentrated broth. When finished, wring the cloth well to extract all the juice.

The next step for the Tucupi broth is to let the liquid rest for 4 hours in a bowl, preferably made of clear glass. Then separate the starch deposited at the bottom of the yellow liquid, and let the liquid ferment overnight, covered with a cloth. This step is important because raw and freshly prepared tucupi are poisonous.

Tip: Starch is powder, which you can dry in the sun and then use in recipes, or use moist when preparing tacacá.

After the indicated time, transfer the liquid to a pan and add the garlic, chicory, salt and pepper to taste. Bring to the fire and boil for 30 minutes. Strain and use this tucupi broth to prepare the traditional tacacá from Pará and also in fish, seafood, chicken and duck recipes. Enjoy your food!

Tip: Reserve the broth in the fridge for 1 hour.
